Pumpkin Filet Mignon Stew

Ingredients
  

  • 7 Cups Beef Stock
  • 2 15 oz. can Pumpkin Puree
  • 2 Cups Kale, chopped
  • 1 Large Onion, chopped
  • 5 Cloves Garlic, chopped
  • 1 Cup White Wine
  • 4 Tb. Olive Oil
  • 10 Oz. Filet Mignon, thin slices
  • Salt & Pepper
  • Flat Leaf Parsley

Instructions
 

  • Bring stock and pumpkin puree to a boil. While heating, wash and chop vegetables and filet mignon.
  • Once stock and puree are at a boil, reduce heat. Add onion, kale, garlic, and meat.
  • Simmer on low for 2 hours.
  • Add white wine, and season with salt and pepper to taste.
  • Garnish with fresh parsley.

Notes

If filet mignon isn't available, lamb shanks or sirloin steak are great options.
